1 pound whole wheat pasta, cooked |
1 tablespoon extra-virgin olive oil |
1 onion, sliced |
1 clove garlic, minced |
14 ounce tomatoes, drained |
1 tbsp oregano |
1 tsp crushed red pepper |
1 pound frozen spinach, sauteed |
1 tsp freshly ground pepper |
1/3 cup crumbled feta cheese |
Directions:
1. Cook pasta in a large pot of boiling salted water until al dente, according to package directions. 2. Meanwhile, heat oil in a large skillet over medium-high heat and sauté onion and garlic. 3. Add tomatoes, oregano, and crushed red pepper; simmer for 10 minutes. 4. Stir in spinach; heat through. 5. Drain the pasta, toss with sauce and season with pepper. Top with feta. |
