A good-for-u and yummy meal for those hot summer days. Ingredients:
8 cups baby spinach |
1 cup cubed low-fat cheddar cheese |
1/2 cup seasoned croutons |
1 tomato, peeled, chopped |
15 1/2 ounces canned red salmon, drained |
1/2 cup green onion, chopped |
1/2 cup plain nonfat yogurt |
1/4 cup low-fat mayonnaise |
1 tablespoon skim milk |
1 tablespoon chopped fresh parsley |
1 teaspoon chopped fresh dill or 1/2 teaspoon dried dill |
1/8 teaspoon onion powder |
Directions:
1. Combine all salad ingredients; refrigerate until ready to serve. Mix yogurt, mayo (Miracle Whip is good too), milk in bowl, stir to blend well. Stir in remaining dressing ingredients. Refrigerate until serving. When ready to serve, toss salad with dressing. |
