Spinach and Ricotta Pasta Sauce |

Really tasty and inexpensive. Ingredients:
1 onion, peeled and chopped |
2 garlic cloves, minced |
14 ounces spinach, chopped |
cooking spray |
1/2 teaspoon ground nutmeg (optional) |
12 ounces ricotta cheese |
1/2 cup chicken broth |
1 pinch salt & freshly ground black pepper |
Directions:
1. Spary a large non stick saucepan with cooking spray and add the onion, garlic and spinach. Stir fry for 8-10 minutes. 2. Add the nutmeg (if using) ricotta and broth. 3. Cook for a further 4-5 minutes, stirring often. 4. Remove from the heat and season well. 5. Serve mixed with cooked pasta of your choice. |
