This soup is excellent with a thick slice of bread. Ingredients:
10 ounces spinach, frozen chopped |
1 cup basmati rice |
1 small onion, finely chopped |
1 cup vegetable broth |
8 cups water |
1/2 teaspoon garlic powder |
1 pepper to taste |
6 ounces yogurt, plain or lemon soy (about 3/4 cup) |
Directions:
1. Place all the ingredients, except the yogurt, in a large pot and cook over medium heat for 30 minutes. Add yogurt and cook another 5 minutes. Serve warm. 2. Total calories per serving: 118 3. Fat: 1 gram |
