SPINACH AND RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bateman Estate in Wills Point, Texas in 1985. Ingredients:
1 cup chopped onion |
1-1/2 cups water |
1-1/2 cups instant brown rice |
1 package frozen chopped spinach |
3 tablespoons grated parmesan cheese |
1/4 teaspoon ground nutmeg |
1/8 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
Directions:
1. Coat a large pot with cooking spray and preheat over high heat. 2. Add onion and cook stirring often for 2 minutes. 3. Add rice, water and spinach to pot and bring to a boil. 4. Reduce heat to medium low then cover and simmer without stirring for 15 minutes. 5. Break spinach up with a fork and stir into rice. 6. Add parmesan, nutmeg, salt and black pepper then stir to mix. |
