Spinach and Red Pepper Salad |

I have cut the fat significantly by cutting the oil. The original recipe calls for 1/4 cup...I use 1/8. Adjust to your family's likings! Ingredients:
1 (10 ounce) package baby spinach |
1 red bell pepper, chopped |
1/2 cup parmesan cheese, grated |
1/8 cup olive oil |
1/4 cup rice vinegar |
Directions:
1. In a large bowl, mix the baby spinach, red bell pepper, and Parmesan cheese. 2. In a small bowl, mix the olive oil and rice vinegar. Toss with the baby spinach mixture, and serve. |
