In my opinion it is the adding of Feta to the spinach salad and the salad dressing that makes it just that wee bit diffirent from all the other spinach salads:) Not to mention the mushrooms, I eat more than I put in whilst making the salad, bad bad bad women! Read more ! Ingredients:
salad |
5 -6 baby spinach leaves, rinsed |
125 g mushrooms, sliced |
4 - 5 spring onions |
1 small red pepper, sliced into julienne strips |
1/2 punnet beansprouts |
100 g feta cheese, cubed |
dressing |
100 ml extra virgin olive oil |
30 ml lemon juice (freshly squeezed) |
15 ml wine vinegar (i prefer rice wine vinegar) |
1 ml brown sugar |
2.5 ml crushed garlic |
5 ml origanum |
salt and freshly ground black peper |
Directions:
1. SALAD 2. Remove the stems of the spinach leaves and chop if you like I leave them whole or just rip them 3. Combine the spinach, mushroom, red pepper, beansprouts and spring onion. 4. Pour salad dressing over and top with feta cheese just before serving. 5. DRESSING 6. Place all the ingredients in a jar and mix well, keep until ready to serve 7. Bon Appetit! |
