Spinach and Mushroom Quiche |

Lowfat version. No crust. Ingredients:
3 eggs |
1 1/4 c nonfat milk |
2 oz. 2% cheddar cheese |
10 mushrooms |
2 c spinach leaves |
1/2 tbsp butter |
1 salt and pepper |
Directions:
1. Beat eggs. 2. Add milk to equal 1 1/2 c total. 3. Saute mushrooms in butter, drain. 4. Add spinach and mix. Cover and let cook a couple of minutes until spinach is wilted. 5. Add vegetables, cheese, salt and pepper to egg/milk mixture. Stir to mix. The total should not exceed 3 cups. 6. Pour into a pie plate or quiche pan sprayed with nonstick spray. You can also use a pie crust, but the calories will increase tremendously! 7. Bake at 350 for 30-35 minutes, or until set. Let rest for 10 min. before cutting. |
