Make-ahead tip: Dressing and salad greens can be prepared a day ahead. Cover and chill separately. Ingredients:
1 1/2 tablespoons extra-virgin olive oil |
1 tablespoon water |
1 tablespoon balsamic vinegar |
2 teaspoons dijon mustard |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
2 tablespoons thinly sliced green onions |
6 cups torn spinach |
4 cups gourmet salad greens |
2 tablespoons fresh tarragon leaves or 2 teaspoons dried tarragon |
Directions:
1. To prepare dressing, combine first 6 ingredients in a large bowl; stir well with a whisk. Stir in onions. 2. To prepare greens, combine spinach, salad greens, and tarragon in a large bowl; add the dressing, and toss well. Serve salad immediately. |
