Spinach And Lemon Soup With Meatballs |

This is like Greek avgolemono but with meatballs. Ingredients:
2 large onions |
3 tbsp. oil |
1 tbsp. ground turmeric |
1/2 cup yellow split peas |
5 cups water |
8 oz. ground pork |
1 lb. spinach, chopped |
1/2 cup rice flour |
juice of 2 lemons |
2 garlic cloves, finely chopped |
4 eggs, beaten |
salt and pepper |
Directions:
1. Chop one of the onions and fry in 2 tbsp. of the oil in a large pan until golden. Add the turmeric, peas and water and bring to a boil. Simmer for 20 minutes. 2. Grate the other onion into a bowl, add the pork and seasoning and mix well. Using your hands, form the mixture into small balls, about the size of walnuts. Carefully add to the pan and simmer for 10 minutes, then add the spinach, cover and simmer for another 20 minutes. |
