This is a great alternative to regular mashed potatoes. I've had the recipe for years and it's our favorite. It's also a great way to get kids to eat spinach without them knowing it. You can cut back a little on the cream cheese, sour cream, and butter to save calories and will also make a slightly drier casserole. Read more . Use low-fat ingredients where you want. Ingredients:
6 large or 8 medium potatoes, peeled, boiled and drained |
1 pkg. (8 oz.) cream cheese, softened |
1 cup (8 oz.) sour cream |
1/2 cup (1 stick) butter or margarine |
1-1/2 tsp. salt |
1-1/2 tsp. dried dill weed |
1/4 - 1/2 tsp. pepper |
1 pkg. (10 oz.) frozen chopped spinach, thawed (or cooked) and well drained |
Directions:
1. In a large bowl, whip potatoes, cream cheese, sour cream and butter until smooth. Add all remaining ingredients and continue to beat until well mixed. Spoon into a 2 qt. casserole dish that has been sprayed with oil. Bake, covered, at 375ยบ for 20 minutes. 2. Casserole can be prepared ahead and refrigerated, then baked just before serving. Be sure to allow to come to room temperature for 30 mins. before baking. |
