Spinach and Garlic Couscous |

This tasty accompaniment combines both a vegetable and a starch for a great one-dish side. Ingredients:
1 teaspoon olive oil |
1/2 cup finely chopped onion |
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry |
1 tablespoon bottled minced garlic |
3/4 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
1 (14-ounce) can fat-free, less sodium chicken broth |
2 tablespoons light stick butter |
1 (10-ounce) package couscous |
Directions:
1. Heat oil in a large saucepan over medium-high heat. Add onion; sauté 4 minutes or until tender. Add spinach and next 3 ingredients; sauté 1 minute. Add broth and butter; bring to a boil, and stir in couscous. Remove from heat; cover and let stand 5 minutes. Fluff with a fork. Serve immediately. |
