4 slices bacon, chopped |
1 medium onion, chopped |
4 garlic cloves, minced |
1 teaspoon ground cumin |
1/8 teaspoon ground allspice |
1 (14 ounce) can chopped tomatoes |
1 (14 ounce) can chicken broth |
1 (15 ounce) can garbanzo beans, rinsed and drained |
1 lb fresh spinach, washed and chopped |
4 scallions, chopped |
1 tablespoon worcestershire sauce |
1/4 teaspoon pepper |
Directions:
1. In a large saucepan, cook bacon, onion and garlic over medium heat, stirring occasionally, until bacon renders its fat and onion begins to brown, 5 minutes. 2. Add cumin and allspice, and cook, stirring, 1 minute. 3. Add tomatoes and chicken broth, cook 5 minutes. 4. Add garbanzo beans, spinach, scallions, worchestershire, and pepper. Bring to a boil. 5. Reduce heat to low, cover and cook, 30 minutes. |
