2 tsp olive oil |
1 onion, chopped |
16 oz spinach |
1/4 tsp salt |
1/8 tsp black pepper |
3 oz feta, reduced fat |
1 tsp balsamic vinegar |
Directions:
1. Heat oil in large skillet. Add onion and cook until just golden, about 3 minutes. 2. Add spinach, salt, pepper and stir, cook until heated through, about 3 minutes. 3. Drizzle with balsamic vinegar, stir in feta and serve. |
