Veg, eggs, and cheese Ingredients:
4 oz. feta cheese |
6 eggs |
1 tbs. olive oil |
2 cups spinach |
1/4 cup red onion |
1/4 cup red pepper |
Directions:
1. Sautee onion and red pepper in 1/2 tbs. olive oil. 2. Add spinach and wilt. 3. Put veg in bottom of 9 inch pie plate greased with other 1/2 tbs. olive oil. 4. Separate eggs and whip whites until just foamy. 5. Whisk in yolks. 6. Add feta to the eggs. 7. Pour egg and cheese mixture over the veg. 8. Bake at 350 for 20-30 minutes. |
