Spinach and Cream Cheese Gratin |

This recipe is from the Vegetarian Low-Carb Diet by Rose Elliott. This is good for Phases 1, 2 and 3. Keep some frozen chopped spinach in the freezer and you can make this recipe in an instant. I find the best way to drain all the excess water off the defrosted spinach is to squash it into a fine mesh sieve with the back of a spoon. Ingredients:
10 ounces frozen chopped spinach, defrosted |
3 ounces boursin cream cheese with garlic and herbs |
4 ounces cheddar cheese, grated |
Directions:
1. Preheat oven to 350 degrees. 2. Mix spinach with the cream cheese and half the grated cheese. Spoon the mixture into a shallow casserole and sprinkle the rest of the grated cheese on top. 3. Bake for 25 minutes or until golden brown. |
