Spinach and Chickpea Salad |

This is a tasty and healthy salad. You can use feta cheese (or whatever kind you like) in place of the goat cheese. Balsamic or blue cheese dressings go nicely with this. Ingredients:
8 ounces fresh spinach, rinsed and dried |
1 yellow bell pepper, diced |
1 cucumber, sliced |
1 (15 1/2 ounce) can chickpeas, drained and rinsed |
1 tomato, chopped |
4 ounces goat cheese |
1 avocado, sliced |
Directions:
1. Combine all ingredients in a bowl and toss with your favorite salad dressing. |
