These puffs are sinfully delicious! So much better than buying them frozen!!
Ingredients:
1 lg bag frozen spinach (thawed & well drained)
1 wedge of brie cheese (sliced thinly)
2 eggs, beaten (1 for mixture, 1 for sealing edges)
1/4 teaspoon nutmeg
salt and pepper
1 sheet (1/2 of 17 oz package) frozen puff pastry, thawed
parmesan cheese
Directions:
1. Preheat oven to 425 degree F.
2. Put well drained spinach, beaten egg and nutmeg into bowl. Salt and pepper to taste.
3. Roll pastry to a 12 inch square then cut into 4-6 inch squares.
4. Divide spinach mixture diagonally over half of each square, leaving a 1/2 border. top with Brie slices, using as much as you like. Brush edges of pastry with beaten egg, fold pastry over to form triangle and seal and flute.
5. Transfer triangles to a dampened cookie sheet.
6. Brush tops with beaten egg, make 2 small slits to allow steam to escape, sprinkle with Parmesan cheese.
7. Bake 10 minutes until golden brown. Serve hot or cold.
8. Note- If making appetizers, cut into 3 inch squares instead.
9. Brie can be rather hard to slice because it's so soft. Putting it in the freezer for a half hour will make it easy to slice.
