Spinach And Bacon Stuffed Mushrooms |

A tasty and satisfying starter Ingredients:
225g bag of baby spinach |
8 large flat mushrooms |
2tbsp olive oil |
5 rashers of bacon, chopped |
2 garlic cloves, peeled and crushed |
75g fresh white breadcrumbs |
25g mature cheddar, grated |
8 cherry tomatoes, halved |
Directions:
1. cook the spinach in a pan following the instructions on the packet. 2. cool slightly then drain and squeeze out as much as possible. 3. roughly chop the baby spinach. 4. pre-heat the oven to gas mark 6, 200 degrees 5. remove and chop the mushroom stalks, chop bacon and brown both in a panuntil crisp. 6. add the garlic and breadcrumbs to cook,stirring for a few seconds and remove from heat. 7. place the mushrooms on a large baking tray and season with salt and pepper. 8. mix the spinach, cheese and cherry tomatoes with the bacon mixture and spoon on top of the mushrooms. 9. bake for 20-25 mins until the mushrooms are tender and topping is browned. |
