Good pasta Ingredients:
this came to mind while i was working on another recipe, it works for me. |
spinach and bacon pasta |
1/4 to 1/2 lb bacon (peppered bacon or any you like will work) pancetta, italian bacon is also good). drain grease. |
1/2 lb. fresh spinach ( variation 1 box frozen chopped spinach, well drained; can work) |
1 clove garlic chopped |
2 tbs. chopped onion |
1/2 cup butter or margarine |
8 ozs. ( 5 1/2 to 6 cups ) of egg noodles, bow tie pasta or a similar noodle of your choice. |
1/2 cup heavy cream ( called whipping cream in stores) |
1 cup grated parmesan cheese |
pepper, coarse ground if desired |
Directions:
1. Fry Bacon til crisp. You can chop it or use a food processor. it needs to be in large crumbles. 2. Remove and discard tough stems from spinach; tear or coarsely chop leaves. In a pan, cook 3. Directions: 4. garlic and onion in half the butter until golden (don't over cook garlic it will get bitter). Add spinach; and cover and cook til just wilted. Meanwhile, cook noodles as directed on package; 5. drain and mix with remaining butter. Then toss with cream,cheese, spinach and bacon. let guest add their own pepper. This makes about 3 to 4 servings 6. You can also sprinkle with a little of Parmesan or a shredded mozzarella after plating the food. 7. Some nice garlic cheese bread goes well and a nice salad. Maybe Stephanie's tomato, basil, artichoke salad would be an option. 8. Stephanie's Salad is made out of 1 can sliced artichokes, 6 or 8 Roma tomatoes sliced in quarters , a tbs. dried chopped basil and a bottle of your favorite Italian dressing. |
