Spinach And Bacon Omelette |

Delicious and filling Ingredients:
-2 tbs olive oil |
-1 sm red potato |
-less than 1/2 cup yellow onion |
-1 garlic clove |
-3 mushrooms |
-sm tomato |
-3 strips bacon |
-1&1/4 cup spinach |
-3 eggs |
kosher salt |
black pepper |
aged parmesan cheese |
shallot |
Directions:
1. Skillet on medium high heat 2. add olive oil 3. add chopped~ 4. bacon 5. potatoes 6. onions 7. garlic 8. mushrooms 9. spinach 10. dash of kosher salt and black pepper 11. cook these ingredients until tender, (turning two or three times only!) 12. add beaten~ 13. eggs 14. (Do Not stir/mix) 15. by holding skillet handle, roll around the cooked mixture. 16. about halfway cooked, add five or six tomato wedges 17. and small amount of grated Parmesan cheese 18. when done cooking, gently fold over and top with thinly sliced mushroom, shallots, 4or five tomato wedges and grated Parmesan cheese 19. (This is for presentation AND taste.) 20. 2 to 3 servings 21. ENJOY! |
