1 10 oz. package frozen, chopped spinach, cooked and squeezed dry |
1 1/2 cups breadcrumbs |
1/2 cup freshly grated parmigiano reggiano cheese |
1/4 cup bacon, cooked and crumbled |
1/8 tsp. garlic powder |
1/8 tsp. black pepper |
3 eggs |
1/4 cup melted butter |
oil for frying |
Directions:
1. Combine the first 6 ingredients in a large bowl. Mix in eggs and melted butter. 2. Roll into 1-inch balls. Heat oil in a heavy skillet over high heat. Fry balls in batches until golden brown, about 2 minutes. Drain on paper towels and serve warm |
