A delicious raw vegan dish that can be both a sandwich spread and a dip for veggie chips! Ingredients:
2 avocados |
3 large cloves of garlic |
1 medium tomato |
5 to 6 oz. of raw spinach |
5 or 6 baby portabella mushrooms (or mushrooms of your choice) |
salt (to taste) |
pepper (to taste) |
2 to 3 tablespoons of lemon juice |
Directions:
1. In a food processor, blend the spinach and avocado very well. 2. Next, add your garlic, lemon juice, salt, pepper and tomato. Blend those thoroughly before adding your mushrooms. 3. Give it a final short blend (you don't want them too chopped up) before putting in a bowl and serving. 4. This is great to keep for several days. Serve! |
