Spinach and Artichoke Dip with Banana Peppers |

Directions:
1. cans artichoke hearts (13.75 oz. each), drained and quartered 2. pkg. frozen chopped spinach, thawed and squeezed dry 3. c. mayo 4. pkg. cream cheese 5. /4 c. diced onion 6. /4 c. diced red peppers 7. T. minced garlic 8. c. monterey jack cheese, shredded 9. /2 c. drained and chopped banan pepper rings 10. Stir together artichoke, spinach, mayo, cream cheese, onion, bell peppers and garlic in slow cooker. Cover and cook on high for 1-2 hours or on low heat for 3-4 hours. Stir in cheese and pepper rings. Cover cooker; let dip stand until cheesemelts (about 5 min). Set cooker on warm setting and serve with crostini or pitas. |
