This salad will have you dancing in the kitchen. It's delightful. Ingredients:
3 strips bacon |
2-3 t olive oil |
2 t red wine vinegar |
1 t dijon mustard |
1 small clove garlic, minced |
1/8 t salt |
1 bunch (10 oz.) spinach, coarse stems trimmed (about 5 c loosely packed) |
1 macintosh apple peeled and cut into 1/2 pieces |
8 shavings romano cheese, each about 1 x 2 |
1/8 t ground black pepper |
Directions:
1. Cook bacon in a skillet over medium-low heat, turning slices occasionally until crisp and browned. 8-10 minutes. 2. Drain on paper towel-lined plate and keep warm. 3. Measure the fat in pan. (There should be 2-3 T.) Add enough oil to equal 5 T of total fat in the pan. 4. Whisk the vinegar, mustard, garlic, salt and pepper into the fat in pan. Keep warm. 5. In a large bowl, combine the spinach and apple. 6. Spoon the warm bacon mixture over the spinach and apple. Toss to coat. 7. Divide among 4 plates. 8. Crumble the bacon over spinach and top with the cheese. |
