Spiked Orange Chicken Breast |

I forgot I had this one...as I dig through my stacks of cook books and hand written notes of cooking experiments I keep finding old (but now new) ideas. This one was very easy and healthy but I have a note that I would add some additional spices next time. Ingredients:
16 ounces chicken breasts, boneless and flattened slightly |
1/4 cup orange juice, low calorie |
3 tablespoons orange marmalade |
1/4 cup mandarin orange, canned with juice removed and chopped |
1/4 teaspoon ground cinnamon |
1/4 teaspoon chili powder |
salt |
pepper |
Directions:
1. Coat a skillet with non-stick cooking spray and bring to medium high heat. Season chicken with salt and pepper and add to the hot pan. Cook 3-4 minutes until lightly browned. Turn chicken and cook for an additional 2-3 minutes. 2. Reduce heat to medium low and add all remaining ingredients. Cook 3-4 minutes until all ingredients are warmed, thickened, and well incorporated. 3. Serve with the orange mixture. |
