This can be a meal in itself or a side for chicken, lamb or fish. Either way it's very good. Ingredients:
1/2 teaspoon vegetable oil |
2 green onions, chopped |
1 sweet red pepper |
1 garlic clove, minced |
2 tomatoes, chopped |
1 zucchini, diced |
1 cup chickpeas, cooked |
1 cup boiling water |
1/4 teaspoon salt |
1/2 teaspoon curry powder |
1 teaspoon ground cumin |
2 tablespoons fresh parsley |
1/8 teaspoon ground cinnamon |
1/2 teaspoon ginger |
1/4 teaspoon cayenne |
1 cup couscous |
Directions:
1. In a medium-size skillet heat the oil. 2. Add green onions, sweet pepper, garlic, tomatoes and zucchini; saute 5 min, stirring. 3. Remove from heat and keep warm. 4. In a medium-size saucepan, combine the remaining ingredients, mix, cover and let stand 5 minutes, until liquid is absorbed. Add the first mixture and fluff with a fork. |
