1/2 teaspoon ground cumin |
1/4 to 1/2 teaspoon salt |
1/8 teaspoon cayenne pepper |
1 turkey breast tenderloin (1/2 pound) |
3 teaspoons olive oil, divided |
1/4 cup chicken broth |
2 tablespoons lime juice |
3 tablespoons chopped onion |
2 tablespoons chopped jalapeno pepper |
1 cup canned black beans, rinsed and drained |

3 tablespoons chopped fresh tomato |
4 teaspoons picante sauce |

Add broth and lime juice to skillet. Reduce heat; cover and simmer for 15-18 minutes or until turkey juices run clear and thermometer reads 170°, turning once. 2. In a small skillet, saute the onion and jalapeno in remaining oil until crisp-tender. Transfer to a bowl. Add the beans, corn, tomato, picante sauce, cilantro and remaining spice mixture.
