Marinate in the morning for a quick dinner at night. Serve with rice. Prep time does not include marinating time. Marinate for at least 2 hours. Ingredients:
1/4 cup lime juice |
1/2 cup pineapple juice |
2 -3 tablespoons minced jalapeno peppers |
2 garlic cloves, minced |
1/4 cup minced shallot |
1/4 cup light soy sauce |
2 lbs boneless chicken tenders |
Directions:
1. Combine all ingredients except chicken to create a marinade. 2. Put the chicken in a large plastic zipper food storage bag and pour the marinade over the chicken. 3. Let marinate in the refrigerator for at 2-6 hours, turning occasionally. 4. Drain chicken and discard marinade. 5. Grill, broil or saute the chicken as desired until fully cooked, about 10 minutes. |
