This is a dish I magically threw together one day and it was delicious. For the adventurous soup lovers. Ingredients:
1/2 onion |
3 cloves garlic |
1 jalapeno |
water |
3 diced roma tomatoes |
chicken bouillon cubes |
parsley |
basil |
valentino hot sauce |
soy sauce |
balsamic vinegar |
macaroni |
limes |
avocado |
tostadas or tortilla chips |
Directions:
1. Saute 1/2 diced onion, 3 cloves diced garlic, and 1 jalapeno in a little water until golden brown (water will evaporate). 2. Remove from heat and add approximately 6 cups of water, 2-3 chicken bouillon cubes, and 3 diced Roma tomatoes. 3. Add to taste. Dried parsley and basil, hot sauce (can substitute V8) depending on your spice tolerance, balsamic vinegar, and soy sauce. 4. Bring to boil. 5. Add 2 cups of macaroni and cover and simmer until the noodles are cooked. Once the noodles are cooked turn off the heat, squeeze 2 limes into the soup and stir. 6. Prepare a bowl with crushed tortilla chips, and half an avocado and then pour the soup into the bowl. 7. Enjoy! |
