Another staple - great for veal or bbq's. Ingredients:
1 tablespoon olive oil |
1 onion, chopped |
2 teaspoons chili, chopped |
1 garlic clove, crushed |
1 red capsicum, seeded and chopped |
850 g canned tomatoes |
salt and pepper |
Directions:
1. Heat oil in frying pan. Saute onion, chilli and garlic until tender. 2. Stir in capsicum. Cook 3 minutes. 3. Blend in tomatoes. Bring to boil reduce heat and simmer 20 minutes stirring occasionally. |
