I use this basic tomato sauce as a base for any recipe that calls for tomato sauce. I freeze 2 cup batches and defrost them as needed for the recipe I'm making. I then tailor the sauce to my flavor needs for the recipe, adding herbs and spices as needed. This works so well, I haven't purchased jarred spaghetti sauce in months. Ingredients:
2 tablespoons olive oil |
2 teaspoons minced garlic |
4 (28 ounce) canned diced tomatoes, drained |
1 teaspoon dried red pepper flakes |
salt and pepper |
Directions:
1. In a large saucepan over medium heat, warm the oil. Add the garlic and saute for 1 minute. 2. Add the tomatoes and red pepper flakes, raise the heat to medium-high, and bring to a boil. 3. Reduce the heat to medium low and simmer, uncovered, until the sauce is thick, about 40 minutes. 4. Season to taste with salt and pepper. 5. Optional: If you like the sauce smoother, use a stick blender to blend the sauce to desired consistency. |
