Another Donna Hay recipe. Ingredients:
2 tablespoons vegetable oil |
1 brown onion, sliced |
4 garlic cloves |
2 small red chilies, crushed |
1 tablespoon grated ginger |
3 cups tomato puree |
1 cup fish stock |
1/4 cup malt vinegar |
1/4 cup caster sugar |
sea salt and black pepper |
1 kg prawns |
coriander leaves, extra chopped chilli and steamed rice to serve |
Directions:
1. Heat oil in large pan. 2. Add the onion, garlic, chilli and ginger. 3. Cook for 2-3 minutes. 4. Add tomato puree, stock, vinegar, sugar, salt and pepper and cook for 8-10 minutes. 5. Add prawns and cook for 3-4 minutes until cooked through. |
