                    SPICY TOMATO GRITS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hamm Estate in Plano, Texas in 1999. Ingredients: 
                    
                        
                                                2 bacon slices chopped  |  
                                                2 cans chicken broth  |  
                                                1/2 teaspoon salt  |  
                                                1 cup quick cooking grits  |  
                                                2 large tomatoes peeled and chopped  |  
                                                2 tablespoons canned chopped green chilies  |  
                                                1 cup shredded cheddar cheese  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Cook bacon in a large heavy saucepan until crisp reserving drippings in pan. 2. Gradually add chicken broth and salt then bring to a boil. 3. Stir in grits, chopped tomato and chilies then return to a boil stirring often. 4. Reduce heat and simmer stirring often for 20 minutes then stir in cheese. 5. Cover mixture and allow to stand 5 minutes before serving.                              |
