Spicy Thai Cucumber Salad |

A side dish served with grilled/baked tendeloin with curry sauce. Ingredients:
1 cucumber, sliced and seeded |
1/2 red jalapeno chiles (fresh) or 1/2 chili, chopped and seeded (fresh) |
1/2 cup water |
3 tablespoons white wine vinegar |
4 tablespoons sugar |
fresh coriander |
Directions:
1. Place cucumber and jalapeno/chilli in a bowl. 2. Combine vinegar,sugar and water in a small sacuepan. 3. Heat until sugar is dissolved. 4. Set aside to cool. 5. Poul cooled mixture over cucumber and chilli. 6. Chill in refrigerator for about 2 hours. 7. Serve with some fresh coriander. |
