1 cup plain low-fat yogurt |
2 tablespoons lime juice |
2 garlic cloves, crushed |
1 teaspoon fresh ginger, minced |
1 teaspoon ground coriander |
1/3 teaspoon cayenne |
4 chicken legs with thigh, skinned |
Directions:
1. In a medium bowl combine yogurt, lime juice, garlic, ginger, coriander and cayenne. 2. Pierce chicken legs all over with a fork and place in the bowl. Turn to coat and marinate at room temperature, turning occasionally, 30-60 minutes. 3. Preheat oven to 350. Remove chicken from marinade and place in a shallow baking dish. Reserve marinade. 4. Bake chicken for 15 minutes. Remove from oven. 5. Spoon reserved marinade over chicken. Bake for 20 minutes longer or cooked through. |
