This is tabouleh with a twist because of the addition of the jalapeno pepper. I counted the soaking time in the prep time. Enjoy! Ingredients:
3/4 cup fine bulgur |
1 cup hot water |
2 tomatoes, seeded and diced |
1 1/2 cups curly or flat leaf parsley, finely chopped |
1/4 cup fresh mint, finely chopped |
1 english cucumber, seeded and diced |
4 green onions, finely chopped |
juice of one lemon |
1/4 cup olive oil |
1 jalapeno pepper, seeded and finely chopped |
salt |
Directions:
1. In a bowl, soak the bulgur in the hot water for 30 minutes. 2. In a large bowl, combine the bulgur with the remaining ingredients. Season with salt. |
