Spicy Sweet Potato & Onion Soup |

This is my own recipe , it's easy to make tastes fantastic. This is for 1 serving as i make it to take to work for lunch. I've never actually measured the herbs and spices as you should make it to your taste but below is a rough guide. Add more or less depending on what you like. The water level should be filled in your pan about an inch above the ingredients level. You can add more water once cooking has finished if the soup is too thick. Ingredients:
1 sweet potato, diced |
1/2 onion, chopped |
handfull chopped mixed pepper |
1/4 teaspoon garlic |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1/4 teaspoon chili powder |
1/4 teaspoon dried herbs |
1 vegetable stock, cube |
1/4 teaspoon worcestershire sauce |
boiling water |
Directions:
1. Add oil to your soup pan and fry the onion, peppers, garlic and chilli powder untill the onions are starting to turn golden. 2. Add the diced sweet potato and fry for a further 2 minutes. 3. Add the boiling water stock cube, salt, pepper, mixed herbs and Worcestershire sauce. 4. Simmer for about 30-40 minutes. 5. Taste soup to see if any more herbs/spices etc are needed, add more if required. 6. Pour soup into a blender and blend until smooth. 7. If your soup is too think add a dash more boiling water until desired consistancy is reached - i like mine thick like a broth. 8. Enjoy with a buttered crusty bread roll. |
