This is one of Mark's favorite ways of preparing green beans. Ingredients:
2 lbs green beans, whole |
1/4 cup sweet & spicy mustard |
1/3 cup honey |
1/3 cup vegetable oil |
1/4 cup pickled jalapeno pepper, with juice |
salt and pepper |
Directions:
1. Chop the peppers slightly. 2. Wash and cut the ends from the green beans. 3. Once the ends are cut, blanch the green beans for about 15 minutes in boiling water until they are tender. 4. In a medium saucepan, place the mustard, honey, oil and heat on medium until mixture begins to bubble. Stir in the jalapeno peppers. 5. Cook for about 10 minutes, stirring constantly. 6. Once this has cooked for about 10 minutes, pour it over the green beans which have been blanched and drained. 7. Add salt and pepper to taste, if needed. |
