Spicy Strawberry-raisin Chicken |

This is something I've grown up on, yet a recipe that is very easy to make. It's wonderful served on top of rice! An excellent balance of sweet and spice. Ingredients:
1 1/4 cups unsweetened pineapple juice |
1/4 cup raisins |
1/2 teaspoon crushed red bell pepper |
2 cloves smashed garlic |
4 (4 ounce) boneless skinless chicken breast halves |
1/2 cup low sugar strawberry preserves |
1/2 teaspoon cornstarch |
Directions:
1. Combine first 4 ingredients in large non-aluminum skillet and bring to a boil. 2. Add chicken, cover, reduce heat and simmer 10 minute or until chicken is cooked through. 3. Remove chicken from skillet and keep warm. 4. Bring liquid to boil if not already reduced by 1/2. 5. Combine strawberry preserves and cornstarch, stir into liquid and cook 1 minute or until slightly thickened. 6. Either put chicken back into skillet to coat with sauce, or serve each breast with roughly 3 tablespoons of sauce - enjoy! |
