Spicy Stir-Fried Snow Peas, Peanut Butter & Mushrooms |

This recipe comes from Cooking Light magazine. Excellent taste and very easy to make. Can add 8 oz chicken if desired. Serving size is about 1 1/2 cups. Ingredients:
12 ounces snow peas |
1 cup red bell pepper strips |
3/4 cup water, divided |
1/2 cup sliced green onions |
1 tsp ground ginger |
2 garlic cloves, minced |
8 ounces (3 cups) sliced shiitake mushrooms |
2 tbsp reduced sodium soy sauce |
2 tbsp creamy peanut butter |
1 tsp cornstarch |
2 tsp tabasco sauce |
1/4 tsp salt |
Directions:
1. Add snow peas, bell pepper, 1/4 cup water, ionions, ginger and garlic to pan. Stir-fry 3 minutes, add mushrooms; stir-fry 2 minutes. (I stir-fryed this mixture longer than this). 2. Combine remaining 1/2 cup water, soy sauce, peanut butter, cornstarch, tabasco sauce and salt in a small bowl. Mix well. 3. Add soy sauce mixture and tofu to pan. Cook 1 minute or until thickened, stirring constantly. |
