Spicy Stir Fried Eggplant |

Tastes just like the stuff you get out Ingredients:
1 medium eggplant, peeled and cut into 1 in. dice |
1 tsp. garlic, finely chopped |
1 tbls. cornstarch mixed with 2 tbls. water to make a paste |
oil for deep frying |
sauce |
2 tbls. oyster sauce |
2 tbls. soy sauce |
2 tbls. water |
1 tbls. white vinegar |
1 tbls. sugar |
1 tsp. chili paste |
1/2 tsp. bean sauce |
1/2 tsp. sesame oil |
Directions:
1. Mix all sauce ingredients together and set aside 2. Put enough oil in wok to deep fry eggplant 3. Heat to 350 4. Fry eggplant for 1 minute 5. Remove and drain on paper towel 6. Remove all but 1 tsp.oil from wok 7. Stir-fry garlic for 5 seconds then add sauce 8. Reduce heat and simmer 20 seconds 9. Add eggplant and simmer for 10 seconds 10. Stir in cornstarch paste slowly until desired consistency |
