Goes great as a side or over pasta. Ingredients:
1 med yellow squash |
1 med zuchinni squash |
1 clove garlic |
2 cups diced fresh tomatoes |
2 fresh basil leaves |
1 sprig of cilantro |
2 tblsp of pastene crushed hot peppers |
1 small can of sliced ripe olives (drained) |
1 small onion |
1/2 green pepper |
olive oil |
pinch of salt & pepper |
Directions:
1. Cut Squash Length Ways. Then Slice Thin 2. Dice Green Pepper & Onion 3. Mince Garlic Clove 4. Finely Chop Basil & Cilantro 5. Heat Enough Oil to Coat Bottom of Skillet 6. Add Onions & Peppers and Saute 'til Tender 7. Add Minced Garlic and Saute 'til Tender 8. Add Crushed Hot Peppers, Basil, Cilantro, Black Olives & Tomatoes 9. Salt & Pepper to Taste 10. Simmer 'til Squash is Tender and Some of the Juices Have Been Absorbed. 11. Serve Over Pasta, Rice or As A Side 12. Enjoy |
