Spicy Split Pea and Sausage Soup |

A delicious and satisfying soup. I use Healthy Ones Skinless Smoked Sausage that has per 2 oz serving only 2 grams of fat and only 80 calories. Sauteed with the garlic, it has a great flavor in the soup and is really healthy. If you don't like things spicy, replace the jalapeno with bell pepper. Ingredients:
4 cups dried split peas or 2 (16 ounce) packages split peas |
42 ounces low-fat sausage, sliced |
2 tablespoons olive oil |
2 carrots, diced |
2 onions, diced |
6 hot banana peppers, diced |
1 bulbs of garlic, pressed or 8 -10 garlic cloves |
1 bunch celery, sliced |
16 cups water |
4 bay leaves |
4 sprigs fresh thyme |
salt, to taste |
black pepper, to taste |
Directions:
1. Saute sausage in olive oil til almost browned, add garlic and saute for a couple of minutes. Remove and set aside. 2. Saute vegetables for 10 or 15 minutes. 3. Add water, spices, lentils, sausage and garlic. Bring to a boil and simmer for 30 to 40 minutes or until lentils are tender. 4. Remove bay leaf and thyme. 5. Serve with crusty bread. |
