SPICY SPINACH This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993. Ingredients:
1 pound fresh spinach |
1 tablespoon peanut oil |
1/2 large white onion coarsely chopped |
1 large tomato chopped into small pieces |
1/2 small lemon thinly sliced |
1/2 teaspoon freshly ground black pepper |
2 tablespoons curry powder |
Directions:
1. Wash spinach thoroughly then cook in saucepan over low heat 5 minutes but do not add water. 2. Heat oil in a skillet and sauté onion and tomato 5 minutes. 3. Add cooked spinach, lemon slices and seasonings then stir constantly for a few minutes. 4. Serve hot. |
