This makes a great side for a mild Asian dish (preferably Korean or Chinese), unless, of course, you want to pair it with a spicy main dish in order to make the whole plate spicy. Ingredients:
1 garlic clove, minced |
1 red bell pepper, cut into 1-inch slices |
1 lb fresh spinach, stems removed and roughly chopped |
1 tablespoon chinese hot mustard |
1 teaspoon lemon juice |
1/4 teaspoon dried red pepper, crushed |
Directions:
1. Spray a large skillet with cooking spray and heat over medium. Add the bell pepper and garlic, then cook for about 3 minutes, stirring frequently. 2. Add the spinach and cook, stirring frequently, for another 3 minutes (or until the spinach begins to wilt). 3. Add remaining ingredients, stir well, and serve immediately. |
