Spicy Southwest Baked Beans |

Great side for your favorite burger! You may substitute 2 cans of black beans for the pinto beans, or use 1 can of each! From 1001 Low-Fat Recipes. Ingredients:
1 cup chopped onion |
1/2 cup chopped green bell pepper |
1 jalapeno pepper, chopped |
2 garlic cloves, chopped |
1 tablespoon olive oil |
2 (15 ounce) cans pinto beans, rinsed and drained |
1/2 cup beer |
1/4 cup sliced sun-dried tomato, softened |
1/4 cup light brown sugar, packed |
1 teaspoon cumin |
1/2 teaspoon dried thyme leaves |
1 bay leaf |
1/2 teaspoon salt |
Directions:
1. Saute onion, bell pepper, chili and garlic in oil in large skillet until tender, about 8 minutes. 2. Combine onion mixture and remaining ingredients in 1 1/2 quart casserole. 3. Bake at 350 degrees, covered, 30 minutes. 4. Uncover and bake 15-20 minutes or until liquid is nearly absorbed. 5. Discard bay leaf. |
