This is a delicious and very filling soup not to be missed. Ingredients:
8 oz french beans (halved) |
2 red onions (sliced) |
4 carrots (cut into strips) |
8 oz tomatos (peeled, de-seeded and chopped) |
2 tbls olive oil |
2 cloves garlic (crushed) |
2 tsp oregano |
3 tbls tomato puree |
5 pints chicken stock |
2 green chillies (chopped very small) |
6 oz pasta shapes |
4 tbls coriander |
4 tbsp parsley |
salt & pepper to taste |
Directions:
1. Heat oil in a soucepan and fry onions, carrots, garlic & oregano for 5 minutes. 2. Add tomato puree, beans, tomatos & chicken stock. 3. Bring to the boil cover & simmer for about 1 hour or until veg is just tender. 4. Stir in chilli, pasta, coriander & parsley. 5. Simmer for 1/2 hour or until pasta is cooked. 6. Season to taste. |
