In 'Martin Yan Quick & Easy' by Martin Yan Ingredients:
8 ounces dried soba noodles |
2 cups sliced napa cabbage |
1/2 teaspoon sesame oil |
2 tablespoons vegetable oil |
2 tablespoons fresh lemon juice |
2 teaspoons soy sauce |
1 1/2 teaspoons sweet chili sauce |
1 teaspoon ground turmeric |
1 teaspoon grated fresh ginger |
1/4 cup sliced pickled ginger |
2 tablespoons chopped fresh cilantro |
2 green onions, julienned |
Directions:
1. Bring a large pot of water to a boil over high heat. 2. Add the noodles and cook according to the package directions. 3. Drain, rinse with cold water, and drain again. 4. Place the noodles in a large bowl, add the napa cabbage and sesame oil; toss to mix. 5. Dressing-combine all the dressing ingredients in a bowl; mix well. 6. Pour the dressing over the noodle mixture and add the pickled ginger, cilantro, and green onions. 7. Toss to coat evenly. 8. Serve immediately, or cover and refrigerate for up to 3 hours. |
