Spicy Soba Noodles

Hot weather heaven. Cold noodles with tang of sesame paste
Ingredients:
2/3 cup soy sauce
1/2 cup tahini
1/2 cup brown sugar
1/2 cup chili oil
1/2 cup sesame oil
6 tablespoons red wine vinegar
2 bunches scallions
1 lb soba noodles
Directions:
1. Reduce soy sauce by 1/2 over high heat.
2. Mince scallions.
3. Combine other ingredients
4. Cook soba noodles for three minutes, plunge in ice water.
5. Stir in the sauce and scallions, refrigerate until cold.
